Add flavor and cheese: Gently mix in shredded cheese and ketchup, being careful not to overwork the meat.
Shape the patties: Form the mixture into flat, round patties and place them on the prepared baking sheet.
Lightly brush the tops with olive oil.
Bake uncovered for 20 minutes.
Optional finish: Sprinkle additional cheese over the patties and return to the oven for 5 minutes, until melted and the patties are cooked through.
