Step 1: Sauté Aromatics & Brown Beef
Heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced onion and minced garlic, sautéing for 2 minutes until fragrant. Add ground beef and cook 5–7 minutes, breaking it up with a wooden spoon until no pink remains. Drain any excess fat.
Step 2: Combine & Layer in Slow Cooker
Transfer the beef mixture to a 6-quart slow cooker. Stir in cream of mushroom soup, milk, salt, pepper, and Worcestershire sauce. Layer half of the thinly sliced potatoes over the beef, overlapping slightly. Repeat with remaining beef mixture and potatoes.
Step 3: Slow Cook
Cover and cook on Low for 6–7 hours, or until the potatoes are tender.
Step 4: Add Cheese & Finish
During the last 30 minutes of cooking, sprinkle shredded cheddar evenly on top. Re-cover and continue cooking until the cheese is melted and bubbly.
