Ingredients:
4 large potatoes
2 tablespoons chopped fresh parsley
1 tablespoon chopped chives or green onions
2 tablespoons cornstarch
1 teaspoon of salt (or to taste)

Prepare the potatoes:
Peel the potatoes and grate them finely.
Place the grated potatoes in a clean cloth or paper towel and squeeze out as much moisture as possible.

Cut the flattened mixture into small squares, about 1 inch on each side.

Heat oil in a skillet or deep fryer to 350°F
